The antibacterial and antifungal activities of spices commonly used for centuries have been reviewed. Several spices such as cloves, oregano, thyme, cinnamon and cumin have shown significant antimicrobial activities against food spoilage bacteria and in pathogens; harmful fungi and even antibiotic-resistant microorganisms such as MRSA.
Therefore, these spices could be used to reduce the risk of food poisoning and bacterial or viral infections. It could also increase food safety and shelf life of products, and treat certain infectious diseases. As combinations of different spices have been shown to have higher inhibitory effects on specific bacteria than those of individual spices, the interactions of more spices should be studied and evaluated in the future to inhibit different micro-organisms in different foods or in the body. Furthermore, herbal products can be considered as an alternative to common antibiotics for the treatment of infectious diseases. Since most studies have focused on the in vitro activities of spices against human pathogenic bacteria, in vivo studies and clinical trials should be conducted in the future. The mechanisms of the antimicrobial activity of spices are yet to be elucidated to optimise the use of spices.

Dosage:
